Seems to me I'd feel a bit better
If outdoors we all could dine!

How about helpin' with the menu
I'm sure you've a recipe to share
All it is that I need you to do
Is email it to the sunshine bear!




Ruthi's BBQ Meat Loaves

2 lbs. ground beef
2 slightly beaten eggs
2 c. soft bread crumbs
1/4 c. finely chopped onions
1 tbsp. horseradish
1 1/2 tsp. garlic salt
1/2 tsp. dry mustard
1/4 c. milk
1/2 c. butter
1/2 c. steak sauce

Combine first 8 ingredients and mix well.
Shape in 6 miniature meat loaves about 4 1/2 x 2 1/2 inches.
Heat butter with ketchup until butter melts.
Brush over all sides of loaves.
Cook meat loaves over medium coals;
turn and brush all sides frequently with sauce.
Cook for 40 minutes or until done.
Pass remaining sauce.
Serves 6.



Ruthi's California Cheese Dip with Fresh Fruits

8 ounces cream cheese
4 tablespoons cream, or milk
6 teaspoons honey
1 teaspoon vanilla
1/2 teaspoon nutmeg, or mace
1/2 teaspoon cinnamon
6 teaspoons fresh lemon juice
4 tablespoons diced toasted almonds

Blend together all ingredients except almonds.
Chill.
When ready to serve place dip in small bowl.
Top with almonds.
Place bowl on plate and surround
with assorted fruits such as banana slices,
melon cubes, grapes,
strawberries and peach or nectarine slices.




Dianna's Oreo Truffles

1pk of cream cheese 1 pk of Oreos
12 oz chocolate chips or baking chocolate


Crush Oreos add to cream cheese
(that has warmed to room temp)
Mix well and roll into ball.
Chill 1 hour.
Melt chocolate.
Dip ball in chocolate
and place on wax paper to set.
Keep refrigerated.




Bonnie's Fruit Salad

1 large container of plain yogurt
2 cans of fruit cocktail
2 cans of pineapple in it's own juice (Cubed)
2 cans of sliced peaches
Fresh green grapes (Optional) about a 1/4 to 1/2 pound
2 to 3 cups of Fresh Strawberries, sliced
2 to 3 Sweet N Low to taste


In a colander,
wash the fruit cocktail and peaches
With cold water,
cut peaches into smaller pieces.
Drain pineapple, wash the grapes.
Wash and slice the strawberries.
In a large bowl,
add all of the drained fruit, grapes, strawberries.
Then add the yogurt, mix well.
Add the sweet n low to taste.
Chill for a couple of hours.
Serve.


Note:

You can add fresh fruit of the season,
using different kinds.
Any canned fruit I use I wash
in cold water and discard the juice,
if they are packed in a light syrup.


DON'T USE

Bananas, they go dark in the yogurt,
Citrus fruit, it ferments.
